My cheesecakes are made from original recipes. Rich, moist and creamy, they will tempt your taste buds no end. I think it is the freshest you can find in Singapore unless you bake it yourself. I use Kraft's Philadelphia Cream Cheese from USA in my cheesecakes as they give the most creamy texture.
The crowd pleaser is the popular Blueberry Cheesecake that is available throughout the year. Besides the Blueberry Cheesecake I bake a few others like Oreo Cookies Cheesecake, Green Tea Cheesecake, Whisky Cheesecake that will be available on a promotional basis during the year. Watch out for them!
All my cheesecakes are of the baked type so they don't melt. But they must be kept refrigerated and they are best eaten well-chilled. The cheesecake melts in your mouth when you eat it, almost like ice-cream!
Blueberry Cheesecake S$42 per cake (8inch, +/- 1.2kg) - With or without the Blueberry topping, this cheesecake is an all time favourite! The cake is moist and flavourful, and melts in your mouth in delightful contrast to the crisp crust and blueberry topping, to tickle your taste buds with a whole spectrum of sensations.
Besides lots of raisins, sultanas, currants, candied peel, glaced cherries, nuts and spices, fruitcakes require lots of time and patience. Only premium brandy is used, there are no other added preservatives.
Preparation starts with washing the dried fruits and picking out pieces of inedible stems and other impurities. Depending on the size of the cake it takes about a couple of hours to bake.
When it is cooled brandy is added to the fruitcake which is then stored in a cool dry place. It is further matured with brandy added at intervals for one to three months. This slow process of aging allows the fruitcake to develop very gratifying flavours not found in the un-aged variety. It is also different from just splashing brandy onto the cake.
After the aging process, the fruitcake is then covered with a layer of marzipan to prepare it for decoration with fondant and royal icing. From S$60 per kg.
The above Longevity Cake was made for my Grand Uncle's 80th Birthday. The decoration consisted of Chinese longevity symbols including the longevity character in Chinese (shou), five white bats (wu fu lin men) and bamboo - another symbol for longevity. Colours used were also symbolic in auspicious meaning.
